The project aims to investigate a unique and high-tech approach for the color/maturity identification system in the agricultural food industry and the role of artificial intelligence (AI) in its deep learning functions. Especially, this research has been conducted in two phases: firstly, we capture the digital color images of skin color from fruits and vegetables. Secondly, we analyzed the physiological characteristics of fruits and vegetables by the traditional color recognition system and substituted optical and artificial intelligence deep learning systems. The findings expected rapid and accurate determination in the ripening of fruits and vegetables could effectively promote smart agriculture industrialization.
Unique Technologies: Imaging and Preservation Technology for Vegetables and Fruits
Prof. Yao-Tung Lin developed a non-invasive optical system to estimate the maturity of fruits and vegetables by detecting the surface color. A deep learning system was introduced to recognize and analyze the image for the precise judgement and evaluation that got 17th National Innovation Award - Excelsior Award (2020).
